I’m a resident of Los Angeles where there’s plenty of sushi restaurants, and I spent 3 weeks in Tokyo on business, eating at authentic sushi bars every day. Despite this, I still regard Sushi Do as one of the best I’ve ever experienced.
(I was in Baltimore on business last year, and drove 80 miles to Harrisburg and back one evening just to eat at Sushi Do!)
Tuan spent some time in France receiving formal training in their style of cooking — it shows up in his innovative use of sauces combined with traditional sushi fare. And he’s always willing to make specials upon request.
